Recipe - slow cooker "Rice Pudding"
« on: Oct 04, 08, 03:05 PM »
We have just eaten a fantastic rice pudding done in the slow cooker  :yup:

Slow Cooked Rice Pudding

25g butter
100g sugar
100g desert rice
1ltr milk

Grease the pot with the butter (use it all up)
Add the other ingredients to the pot
Stir gently together
Turn the slow cooker to high
Stir occassionally during cooking
Cooking time is approx 2.5hrs to 3.5hrs

It's ready when its to the thickness you like your rice pudding to be
We did this in a 3.5ltr slow cooker but it is enough for 2/4 people depending on serving size

Nope, he's got a damn great copper-bottom pot that goes on the hob so he can add stuff at different stages as appropriate. ;)

It's lovely cold, with the skin on. Especially if you've used plenty of nutmeg on top.

Mm. I  hear a rice pudding calling my name!

Canned rice pudding?  :yuck:

I love the home-made variety (when cooked properly) but not cold with skin on!

Rice pudding... I can eat it cold.

I don't like nutmeg so I use cinnamon or cloves instead.

Raspberry jam (seedless variety) is rather tasty with the rice pudding.   :yup:

It's absolutely lush :-)

Took a bit longer - closer to 4 hours - to get as thick as I like it, but it was well worth waiting for.

Thank you.  :flowers:

Well, Babs has just suggested I put it on low overnight so she can have some more for breakfast... I think that sounds like a vote of approval.  :yup:

Make sure ya put enough fluid in if leaving over night - as it can suck moisture up differently everytime ya cook it which is why the cooking time was a guide only ;)

I chickened out - but as I was up at 4.30am I've just put it on now so it'll be ready for when Babs wakes up.

Somebody must have had a bloody good session last night... a group of folk just came staggering by singing incoherently drunk songs at 4.25am.   :drunk:

If I'd have seen who it was, I'd have been outside their door carol-singing later as the hangover kicks in...  >:D
